Baked French Toast

Prep Time: 5 mins • Cook Time: 30 mins • Total Time: 35 mins

* 1 1/2 cups all-purpose flour

* 1 tablespoon granulated sugar

* 1 tablespoon baking powder

* 1 teaspoon ground cinnamon

* 1/2 teaspoon ground nutmeg

* 1/2 teaspoon salt

* 1 cup milk

* 1 egg

* 1/2 cup heavy cream

* 1 tablespoon butter

* 1/4 teaspoon vanilla

* 2 medium-size ripe bananas, sliced

* 8 slices sourdough bread, toasted

* 1/4 cup confectioners' sugar

* 2 tablespoons butter

1 Mix the flour, sugar, baking powder, cinnamon, nutmeg and salt together in a medium-size bowl. Beat together the milk, egg, heavy cream, butter and vanilla in a separate bowl. Add the wet ingredients to the dry ingredients and stir just until moistened. Fold in the banana slices.

2 Let stand 10 minutes. Heat a large nonstick skillet over medium-high heat. Spread the remaining 2 tablespoons butter on 1 side of the toast slices. Dip the slices into the batter, allowing the excess to drip back into the bowl, and transfer to the hot skillet. Cook the French toast until golden, about 4 minutes per side. Transfer to a baking sheet and cover with foil to keep warm.

3 Spoon the confectioners' sugar over the French toast and serve immediately.

Make it a meal: Top each slice with whipped cream and serve with a side of fresh berries.

Make it a casserole: Layer slices of French toast in a baking dish. Top with butter and confectioners' sugar, cover tightly with foil and bake at 375 degrees for 20 to 30 minutes, until heated through.
